Throne of Eldraine is a large set with 101 commons, 80 uncommons, 53 rares, 15 mythic rares, and four variations of each standard basic land. This is the normal size for a large set of this era. Foil cards are included in booster packs with advertised odds of 1 : 45 cards. The set was printed in English in the USA, Belgium, and Japan.
Throne of Eldraine was sold in 15 card booster packs (which contain an additional ad card). Booster boxes have 36 packs.
The US printing uses sequential collation with C1/C2 common collation.
Packs have back-facing cards with common-uncommon-rare ordering followed by a basic land and ad card. If there is a foil, it will displace a common and appear after the rare.

Packs are evenly split between C1 commons and C2 commons. C1 packs will contain 2×A + 2×B + 6×C or 3×A + 2×B + 5×C. C2 packs will contains 4×A + 2×B + 4×C or 4×A + 3×B + 3×C or 4×A + 4×B + 2×C.

When a foil appears in a pack, it will displace a common card. Common foils (including basic lands) displace A commons. Uncommon foils can appear in both C1 and C2 packs (probably at equal rates) and displace B commons. Rare foils displace C2 commons. Foil showcase cards displace C1 commons. (This is at least true for common foil showcase cards. I don't have data for other rarities yet.)
The data is consistent with a common foil rate of 1/6 (lower than Core Set 2020) and an uncommon foil rate of 1/12 (same as Core Set 2020). Wizards has given the rate for borderless and showcase rares as approximately 1/34. (That would put the foil rare rate at 11/204, but this is probably approximate as well.)
There are two uncommon runs, A and B, each with 40 different cards appearing three times each. Half of packs have two A cards followed by a B, and half have one A card followed by two B cards. For cards that have showcase variants, one of the copies on the sheet is the showcase variant.
In contrast to uncommons, rares and mythic rares with showcase or borderless variants have the same chance as other cards to appear in their normal forms. The variants appear in a separate run (probably just one sheet for all the variants, but this is not certain). Wizards has given the overall rate for these cards as approximately 1/27. [1] Empirical data suggests mythic rare variant cards are individually more rare than rare variants (almost certainly), but I'm not confident of the exact breakdown. (My guess would be rares are each on the sheet twice as often.)
The A common run consists of 33 different cards each appearing twice. These cards are white, blue, and red (appearing in that order). The choice of first card is mostly arbitrary.
The B common run consists of 22 different cards each appearing three times. The cards alternate between black and green. The choice of first card is mostly arbitrary.
The C1 common run consists of 27 different cards each appearing twice plus Silverflame Ritual, the short-printed common. It includes cards of all colors and colorless cards. The choice of first card is mostly arbitrary.
The C2 common run consists of 18 different cards each appearing three times plus Silverflame Ritual, the short-printed common. It includes cards of all colors and colorless cards. The choice of first card is mostly arbitrary.
The A uncommon run consists of 40 different cards each appearing three times. For cards that have showcase variants, one of the copies on the sheet is the showcase variant. The choice of first card is mostly arbitrary.

Most of the marketing cards in Throne of Eldraine have a token or emblem on the front face. In addition, there is a card that has an advertisement for MTG Arena on the front face. (The front has an ESRB rating and the back has PEGI, so I'm not aware of any region differences.) They are printed on an 11 × 11 sheet with different items appearing different numbers of times.

Each pack contains four cards from the A common run followed by six cards from the B run. Foils can displace a card from either run.

The B common run consists of 60 different cards each appearing twice plus Gingerbrute, the short-printed common. Other than Gingerbrute, the cards appear in a repeating pattern of red, white, green, blue, black. I've chosen to put Gingerbrute at the end to emphasize the pattern.
The Japanese printing uses sequential collation with (probably) 112 card sheets (which seems to be the usual for Japan). The dimensions of the sheets are not known.

There are 3 common runs: A, B, and C. A contains 27 distinct cards, and B and C each contain 37 distinct cards. Each pack gets 2 to 3 cards from A followed by 3 to 4 cards from B and 3 to 4 cards from C. This means packs are either 2-4-4, 3-3-4, or 3-4-3. The exact ratios may depend on the way foil collation works.

Foils displace a common. As far as I've seen, there will still be at least 2 A commons, 3 B commons, and 3 C commons, and I have seen all three possibilities for common distribution given a foil.

Collector packs (as far as I've seen) are printed in the US. They use sequential collation.
Packs are back-facing. They have common foils followed by uncommon foils with nine total common and uncommon foils, then three showcase and/or borderless cards, then an ancillary card, an extended-art rare, a foil rare, and a foil double-sided token.

Probably, half of packs contain 7 foil commons and 2 foil uncommons. The remaining packs are split either 6 and 3 or 5 and 4. The 6 and 3 split is much more common. Empirically, I estimate maybe only 5% to 10% of packs have four foil uncommons.
Foil commons are printed on one sheet with one copy each of the 101 commons that appear in draft boosters. For cards with a showcase variant, there is an additional showcase copy of the card in the run. Basic lands do not appear.
Foil uncommons are printed similarly on one sheet with one copy each of the 80 uncommons that appear in draft boosters. Again, cards with showcase versions have an additional showcase copy.
The (non-foil) showcase and borderless cards are separated into a common sheet, an uncommon sheet, and a rare (plus mythic rare) sheet. The borderless planeswalkers seem to be on the same sheet as the showcase rares. The third card is always a common. In the first two slots, there can be two rares (1/20), a rare followed by an uncommon (1/20), a rare followed by a common (3/20), two uncommons (1/5), an uncommon followed by a common (1/5), or two commons (7/20). (The given rates are based on observed collation patterns, plus some substantiation from the rare rates advertised on the bottom of the booster box.)
My data suggests that all the ancillary cards appear equally often. However, the rare rates advertised on the bottom of the booster box strongly indicate that the rare rate in this slot should be 60% which is significantly different from what it would be if all cards were equally likely. I don't know how to reconcile the difference.
The extended-art rares are printed on in a separate run than the mythic rares. Apparently, the mythic rares appear 1/8 of the time.
The foil common run consists of 101 normal cards plus 14 showcase cards. The choice of first card is mostly arbitrary.
The foil uncommon run consists of 80 normal cards plus 9 showcase cards. The choice of first card is mostly arbitrary.
The common showcase run contains each of the 14 common adventure cards 8 times. The choice of first card is mostly arbitrary.
The token run contains different tokens different numbers of times. I don't have good data for the backs of the tokens, but all the backs I've seen have food tokens. Note that the special adventure card and the emblem do not appear.
